We all have those days where they just seem to drag out. By about 3pm you are ready to run to the chocolate machine and grab whatever sugary treat you can find.

It's simple to make and tastes so good it almost doesn't feel healthy.
Base: 1 cup dates 1 cup shredded coconut 1 cup almonds Zest of half an orange 1 tsp vanilla extract 1/2 tsp cinnamon
Blueberry filling: 1 1/2 cups frozen blueberries 1/2 cup dates 2 tablespoons Chia seeds
Crumble: 1/4 cup almonds 1/4 cup cashews 1/4 cup coconut Zest of half an orange
Method: Set berries aside to thaw. Microwave dates in water to soften. For base: Mix all ingredients besides dates in a food processor, drain dates and add to mix and blend again. Press base into slice tin. For filling: Mix blueberries and drained dates in food processor. Remove and stir through chia seeds. Pour over base. Topping: Crush nuts. In a pan, add all ingredients until lightly toasted. Sprinkle over slice. Refrigerate for 20 minutes.
