Sweet potato salmon patties

1 small can salmon, drained. (options: swap for tuna, chicken or turkey mince)

1 egg

1/2 large sweet potato, mashed

1 teaspoon herbs and spices of choice

1/2 cup quick oats blended into flour (optional*)

Combine all ingredients, roll into balls, flatten and cook in frypan (cook with coconut oil or alternatively bake them with no oil required).

 

Serve with salad of choice.

(*add oats if a training day or for extra carbs)
