Energy Bites - Your way
Use the following as a base and flavour the bites however you like. Some suggestions are below.
Strawberries and Cream - add 1 scoop of strawberry flavoured protein powder or 2 tsp sugar free strawberry Jelly Lite crystals and 1 tbsp crushed white chocolate.
Choc Peanut Butter - add 1 tbsp natural crunch peanut butter and 1 tbsp raw cacao powder.
Choc Mint - add 1 tbsp raw cacao powder and 1 tsp mint flavoured essence or 1 row Lindt 70% dark mint chocolate (blend chocolate in food processor first).
Cookies and Cream - add 1 tbsp raw cacao powder plus 1 tbsp of mixed dark chocolate and white chocolate chips.
Choc Truffle - add 2 tbsp raw cacao powder and 1 tsp of honey, make balls and roll in raw cacao powder.
Fruit and Nut - add dried fruit and nuts of choice, make balls and roll in shredded coconut.
Apple and Cinnamon - add 1 tsp sugar free apple sauce, 1 tbsp chopped dried / fresh apple, 1 tsp of cinnamon, make balls and roll in oats.
Use this mixture as a basis for your energy bites. Flavour as preferred.
1/4 cup dates (pitted and microwaved for 1 minutes in 1 cup of water, drain water after microwaving)
3/4 cup oats (blended into flour)
1/4 cup sunflower kernels (blended into flour)
For a lower carb option swap the oats with LSA. Just don't forget this will increase the fat content. Be mindful of your macros.
Make them kid friendly by leaving out the protein powder.
Blend dates in food processor. Add dry ingredients and mix together. Add flavour options as desired (suggestions below).
Note: If using dried fruit or choc chips mix these through last using a wooden spoon. Roll into balls / bite size pieces.
Transfer to plate and chill in fridge for at least 30 minutes.
Please note: Dates are high in natural sugars. If preferred, substitute dates for 1tsp honey or agave syrup. Add extra milk / water as needed to reach desired consistency.
