Blueberry Coconut Slice
Ingredients:
Base:
1 cup pitted dates
1 cup shredded coconut
1 cup almonds Zest of half an orange
1 tsp vanilla extract
Blueberry filling:
1 1/2 cups frozen blueberries
2 tablespoons Chia seeds
1/4 cup pitted dates
Crumble:
1/4 cup almonds
1/4 cup cashews
1/4 shredded coconut
1/4 coconut Zest of half an orange
Method:
Set berries aside to thaw. Microwave dates in water for 1- 2 minutes to soften.
Base:
Mix all ingredients except dates in a food processor, drain dates and add to mix. Blend again. Press base into slice tin.
Filling:
Mix blueberries and drained dates in food processor. Remove and add chia seeds. Pour over base.
Topping: Crush nuts. In a pan, add all ingredients until lightly toasted. Sprinkle over slice.
Refrigerate slice for 30 minutes.
